Ice Cream It Saved the Day!

Being a big time foodie this is one of the most delicious desserts I have made. And what makes it memorable is that it was totally unexpected and it came at a time when nothing seemed right.

Having returned home after a full day of stress at the office and an empty stomach, I felt that life couldn’t get worse. Food seemed like my only rescue, and I gathered all of my strength to enter the kitchen.

I’m extremely passionate about food, and I enjoy cooking when I’m happy. But this was not one of those usual days. Work had taken a toll on me, and I was in no condition to cook the whole damn dinner. For days I had been craving a delicious cake, and so decided to bake one. I picked up a large bowl and opened the cupboard to take out flour. To my dismay, there were barely four tablespoons of flour left inside the container. This couldn’t be happening to me! I was so determined to cook a dessert that I decided to use that little flour by making pancakes.

In a bowl, I mixed an egg, with the flour and added two tablespoon of sugar. To it, I added some vanilla extract and a pinch of baking powder. Combining everything together, I poured the paste over a non stick pan with some oil on it, and spread it over to make it thinner. I flipped it over when it was light brownish in color and cooked the other side of the pancake. Meanwhile, I crushed up some walnuts, cashews and almonds together, and took out a scoop of leftover butterscotch ice cream. When the pancake was cooked, I placed the ice-cream quenelle over the pancake, topped it with the nut mixture and chocolate sauce.

It was such a scrumptious dessert, both to look and to eat. Reclining on my sofa, switching on the television, I enjoyed that heavenly dessert to the last bit.

Not only did it eliminate my hunger, it also elevated my mood.

Indeed, for people like me, food is not just a source of survival. It is a passion, it is bliss.
